If you’re like us and crave pancakes more often than not, we've got the perfect recipe for you.
This is not your traditional, make you feel guilty, Sunday brunch, undo your top button kind of fluffy pancake recipe. It’s way more healthy and has a surprisingly small amount of ingredients.
All you really need are two ripe bananas, four eggs, baking powder, and toppings!
We’ve tweaked the traditional banana and egg internet recipe and added a couple more ingredients to make them much tastier and less rubbery.
The key to making these is the flip. Cook on low heat until the egg sets and the first side gets nice and golden, then slowly flip over.
You can add in other optional ingredients and toppings, but the base recipe is as follows:
Ingredients
2 very ripe bananas
1/4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
4 eggs, beaten
butter or oil for cooking
Directions
In a medium-sized bowl, mash 2 bananas. Add baking powder, salt, and vanilla. Mix to combine.
In a separate bowl, beat 4 eggs.
Whisk eggs into banana mixture.
Heat a large frying pan, add 1 tbsp butter and melt.
Add 2 tbsp of batter to the pan and cook through on both sides until golden brown. These are a bit finicky to flip so the best way to cook them is on low heat for longer so the bottom doesn't burn but the eggs cook through. We recommend using a thin, metal spatula and lots of butter.
Serve with maple syrup, a sprinkle of granola, and fresh berries
