You asked so here it is! All made in one bowl, this could be one of the easiest recipes ever. The sweetness of the bread with a kick of spice from the jalapeño makes this loaf irresistible. Perfect as an accompaniment to our easy chili recipe or for any dish that needs a yummy bread on the side.
Ingredients:
1 cup all-purpose flour
1 cup cornmeal
1/3 cup sugar
1/2 tsp salt
3 1/2 tsp baking powder
1/3 cup maple syrup
1 large egg
1 cup milk
50 grams (approx 3 tbsp) diced jalapeños
Directions:
Preheat oven to 400° F
In a large bowl mix flour, cornmeal, sugar, salt, and baking powder until combined.
Create a well in the centre of the dry ingredients and add maple syrup, egg, and milk. Mix wet ingredients in the well and slowly incorporate the dry ingredients from the sides until fully combined. Mix in diced jalapeños.
Divide into two 4x8 pans* and bake for approx 35 minutes or until golden and toothpick comes out clean.
*This recipe can also be made in one large loaf pan but baking time will increase, check the loaf at 55 minutes or bake until golden and toothpick comes out clean.
