You can't go wrong serving this chili on a snowy day this winter! This is a healthy alternative to typical beef chili and it takes just minutes to prepare. Let it simmer for at least 45 mins and you'll be rewarded with perfect flavours, sure to warm those tummies after playing in the snow. Our version is not spicy, but you can easily increase the heat by adding more cayenne or hot sauce as a topping.
Serves 5, can easily be doubled

Ingredients
1 tbsp olive oil
1 yellow onion, diced
2 garlic cloves, minced
1 red pepper, chopped
1 lb ground turkey
4 tbsp chili powder
2 tsp ground cumin
1 tsp dried oregano
1/4 tsp cayenne pepper
1/2 tsp salt
1 (28-oz) can diced tomatoes
1/4 cup tomato paste
1 1/4 cups chicken stock
1 (18 oz) can dark red kidney beans, rinsed and drained
For toppings: shredded cheddar cheese, sour cream, cilantro, hot sauce
Directions:
Heat olive oil in heavy bottomed pot such as a dutch oven.
Add diced onions and red pepper and sauté until cooked through about 5 mins. Add garlic and stir until fragrant. Then add ground turkey, cooking until no pink remains. Top with all the spices, and then add tomatoes, paste and chicken stock and beans. Bring to a boil and then simmer with the lid on for about 45 mins until flavours meld and sauce is reduced.
Serve with your favourite toppings such as cheese, sour cream, cilantro, lime, and tortilla chips.
