After many, many (failed) attempts and getting pretty sick of eating it- we’ve figured out the whole roasted cauliflower. This is not only beautiful, it is the tastiest cauli you will ever consume (in your own home).

For the Cauliflower:
Cut stem off so that cauli sits on a flat surface, but leave some leaves as they are delicious when roasted.
Blanch the cauliflower for three minutes in a pot of salted, boiling water. Place face down in the pot.
Strain water out of cauliflower, then transfer to the baking sheet you will roast it on.
Coat cauli generously with olive oil, salt and pepper and place in oven at 400 degrees for 55 minutes (this depends on the size of cauliflower).
Brush with one more tbsp of olive oil and broil for the last three minutes of roasting (watching carefully just until golden brown).
For the green sauce:
1 avocado
Juice of 2 limes
Large handful of parsley
1 tbsp pickled jalapeños (optional but adds a very nice flavour)
4 tbsp olive oil (more if needed)
Salt & pepper
Directions:
Combine ingredients in a blender and pulse until smooth
Spread sauce on the base of the plate you will serve. Add the cauliflower in the centre and sprinkle goat cheese, and herb of choice (we used parsley)
Cut into wedges or chop up and toss with sauce to serve
